It seems like more and more bits are under the hood are covered with plastic covers. My new car is almost totally covered with plastic covers. What do you guys use to dress all these parts?

Protectant Plus is what we use in the shop.
I personally don't dress my motors.

I shoot them with Optibond or Best Dressed 1:1 thru my Wagner Control Spray
